Gingershack flour blend

This is our flour blend that I use 1:1 for regular flour in all my recipes. I have been able to successfully use this in all my recipes without trouble. Gluten free flour acts differently then regular flour it does not have the same elasticity so it must be handled differently, that means kneading must be done carefully.

Gingershack flour blend

6 cups rice flour
5 1/2 cups millet
3 1/2 cups amaranth
10 oz tapioca starch/flour
5 Tbsps xanthan gum

Blend well together. Store in airtight container. I keep mine in the pantry.
