Martinmas

This week the boys and I celebrated Martinmas. We made lanterns, Kristopher was very precise! We read stories about Saint Martin and made felt lanterns to hang in the window. The best part we actually had it all done and up before Martinmas;).

I love the idea of having the lanterns out through the winter to remind us of the light!

Pizza crust

Gluten free and pizza crust don’t usually together. We love homemade pizza so I persisted until we got it to work.

Pizza crust
1 Tbsp yeast
2 Tbsp warm water
3/4 cup water
2 1/3 cup flour
1/2 tsp salt
1 Tbsp oil

Put all in mixer bowl in order listed. I let this mix in my mixer until it forms a ball. This dough will appear wet do not add extra flour!! It should be sticky to the touch. I let the mix for about 3 minutes. Then cover with a towel and let rise to 20 mins. Put flour down on the table and roll out or roll directly into cookie sheet. Pre bake the crust for 10 min at 400. Then top and bake until all the cheese melts.

We roll the crust thin this helps it to be crispy!
This amount will make one small cookie sheet crust.

Gingershack flour blend

This is our flour blend that I use 1:1 for regular flour in all my recipes. I have been able to successfully use this in all my recipes without trouble. Gluten free flour acts differently then regular flour it does not have the same elasticity so it must be handled differently, that means kneading must be done carefully.

Gingershack flour blend

6 cups rice flour
5 1/2 cups millet
3 1/2 cups amaranth
10 oz tapioca starch/flour
5 Tbsps xanthan gum

Blend well together. Store in airtight container. I keep mine in the pantry.

Natural cleaners

I have an issue with chemical cleaners and scents, they make my head hurt. There comes a time though when you need something stronger then lemon juice and vinegar to disinfect. I have started to add a few drops of Thieves oil to my spray bottles and also to the soapy water for the floors and walls. The thieves leaves a nice scent behind and disinfects everything!!
I also will keep a pot of water simmering on the back of the stove with 10 drops of the oil.
Below is the recipe for the concentrated blend. Do NOT use this straight on your skin!! If I am going to use this on our skin I add a cup of jojoba or olive oil. I keep this on hand at all times.

Thieves oil

1 Tbsp clove oil
1 Tbsp lemon oil
2 1/2 tsp cinnamon oil
2 tsp rosemary oil
2 tsp eucalyptus

Mix all in a glass measuring cup. Then pour into a glass vial make sure to label the bottle!

Simple vacation dinner.

We are back from our vacation. We had such a great time! Russ and I so needed the time away to recharge and rest.

This year we took our camper, instead of staying in hotels. I have to say it was so nice to not have to try to cram everything in our car. We were able to have food with us instead of eating out for every meal. Plus an added bonus at the end of the trip we closed the door hooked up to the Yukon and away we went!! Such a blessing.

One of our biggest hits for dinner was cowboy beans, such a simple recipe and everyone ate their fill!! Yeah for no leftovers!!

Cowboy beans

3 large cans baked beans
1 lb ground beef browned with a packet of taco seasoning
1 lb bacon cut into bite size pieces and cooked

Combine all and allow to simmer on stovetop for 20mins.
